White Chicken Chili Mix

A warm, creamy white chicken chili seasoning mix with onion, green-chile warmth, cumin, chipotle, and herbs. An easy family-size dinner for cool evenings and busy weeknights.

You will need: two 15 oz cans Great Northern beans, drained and rinsed; 4 cups water; 2–3 large chicken breasts, cubed; one 4 oz can diced green chiles; one 15 oz can petite diced tomatoes; and either one 8 oz package softened cream cheese or 1 cup heavy whipping cream, added at the very end.

Directions:

1. In a large pot, cook the cubed chicken breasts until golden brown and cooked through.
2. Add the entire spice packet, drained and rinsed beans, water, petite diced tomatoes, and diced green chiles. Bring to a simmer and cook for at least 30 minutes, stirring occasionally.
3. Remove the pot from the heat. Soften the cream cheese, then stir it in slowly until smooth. If using heavy whipping cream instead, stir it in slowly now. Serve hot, topped with sour cream and grated cheese if desired.

Ingredients: Minced dried onion, chicken bouillon base (base powdered cooked chicken-rosemary, base-rendered chicken fat-BHA, maltodextrin, turmeric, salt [0.25%]), ground cumin, minced garlic, chipotle pepper, New Mexico chile pepper, dried cilantro, dried jalapeño pepper, dried oregano, ground coriander, black pepper, iodized salt (salt, calcium silicate [anti-caking agent], dextrose, potassium iodide).
